Some of my nonlinear curves extend horizontally beyond the data points; others do not. Can I control this?

Yes. From the nonlinear regression parameters dialog, click the "Output..." button (ver 3) or the "Range" tab (ver 4). Set the X range for curve plotting manually rather than having it selected automatically.
